HomeServer initially loads in try-out mode so if you want to give it a try, you can load it onto a USB flash drive, plug that into your system and boot it as a live OS. It only installs and formats the hard drive if you select the "Installer UserOS HomeServer" icon once you've boot it into try-out mode.
Well, yes, if you install the operating system, it is going to format the hard drive - that's what all operating systems do when you install them.
