Can I use Rockpod 5 to encode videos to run on an iphone 3gs?

If so, what settings should I use?

Yep, it can - just pull the device slider across and select "HTC Wildfire S". (The iPhone 3GS and HTC Wildfire S share the same basic video specs).

Apart from maybe changing the aspect ratio (if necessary), that's all you need to do.
